Lully carrot cake

Ingredients

  • 200 grams of sugar
  • 100 grams of butter
  • 3 eggs
  • 200 grams of flour
  • 2 tablespoons vanilla
  • 1 tablespoon cinnamon
  • 25 grams of cornstarch
  • 5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 large carrots
  • 150 grams of walnuts and/or almonds
  • 50 grams of raisins
  • 1 1/4 cup milk

Preparation

Melt and beat the butter until stiff, adding the sugar while continuing to beat, followed by the vanilla, cinnamon and eggs.

The flour, cornstarch and baking powder are mixed and added to the previous mixture alternately with the milk until a well blended paste is formed.

Grate the carrots and add them to the previous mixture along with the walnuts and raisins. Then the dough is ready to be poured in a buttered mold.

The baking time is 60 minutes in a conventional oven at 350ºC.  Remove the pan and let it cool. Unmold and cut into pieces as desired, decorating with whipped cream.
